Chicken Dinner Score!

Good morning all,

Hope you all are ready for a fun filled weekend.

What does this picture have to do with this post?  Absolutely NOTHING. This is about as constructive as I have been all week. Purple Toesies!!!


What to know what happened this week? I know you do.
Hello, any one out there? ( why do I hear crickets)

Here is a story (of a lovely Lady) whose oven decided that it didn't like her using it all the time. Cooking, baking, broiling, roasting. Maybe it just wanted to be cleaned and decided it couldn't wait any longer... Who knows!
I could go all dramatic on you, but I won't as it is kinda boring... but it was my adventure for the week.
It was chicken dinner night. Tuesday. Baked chicken, some rice and corn. YUMMY!

Preheat oven
Season Chicken
Shu Big cats away from chicken
walk out of the room to check on kids and kittens.
Come back into kitchen
Notice a bright light coming from the oven.

Look down and think the "ok, the light is not on." Open oven to see a BRIGHT RED spot in the baking element which looks like it is melting. Turn off oven. Hear a pop.
Open Oven, because you have a death wish. Element is broken in two pieces.
Try to take pictures to show HandsomeMan - Too dark in there
Close oven
Check other burners and broiler.
All works.
Score! No more baking for me ;-)

Grab Charcoal and lighter fluid, cuz we like fire and lighter fluid = larger fire to get charcoal going.
make dinner on the grill.

Handsome Man stated that was the best chicken he has had. I must make it like that all the time.
In 9 years together, THAT WAS THE BEST CHICKEN????

well at least now I know how to get him to eat chicken. And know I know why my oven has been acting wonky.
Also this week I found out you can cook French fries on the grill, Whooooo KNEW!

What do you have planned for the Holiday weekend?
Apparently I have a weekend of grilling since the appliance store is closed until Tuesday.

Hooooo Are you?

1.  Pulled pork and corn.
2. cooking out of course.  Hamburgers, hotdogs, corn, slaw, beans, chips. Just your basic cook out
3. I have horrid handwriting. I could be a doctor, if handwriting counted as a requirement.
4.  I have all my parts except 2 wisdom teeth and a bit of my fallopian tubes ;-)
5. Always. They are side by side on the floor, in the closet, under the coffee table. Hate trying to put on my shoes when they are all over the place. I am weird like that.

Addicted

I am addicted to Pinterest. I could spend HOURS on there. It is like bookmarking all of your favorites. You go to a website that you love or find interesting, click 'Pin it' that is in your bookmark bar and Voila it is saved for you to view again later.
Food, clothing, art, DIY stuff, you name it. ALL there!

Also as good as Lindt's Chocolate with Sea salt! YUM!

Janice & Susan at 5 Minutes For Mom is hosting their 5th Annual UBP! The official end to the party and contest is April 8th but you can still visit the linky after that. This will be my 1st time at the party :) Wo0o0ot


Enchilada Casserole
2 lbs ground hamburger
1 small onion – finely chopped 9 I usually use more)
1 tbsp garlic ( cuz you can never have enough garlic)
1 jar of your favorite salsa ( I dont use this... we have tummy issues here)
2 packages of Mexican or Fiesta mix cheeses
Flour tortillas
2 packages taco seasoning
3 – 4 cans of enchilada sauce

Cook ground meat, drain fat add 1 onion. Cook until onions are translucent. Add 4 tablespoons of salsa and add 2 packages of taco seasoning and cook as directed.
In a baking pan, spread enchilada sauce on the bottom.
On the next layer tortillas, then a layer of meat, sauce, and cheese; keep layering until all ingredients are used.
Bake at 350°F for 30- 40 minutes or until cheese is golden brown.

What's for Dinner?

Monday - Chicken and Rice Casserole - My quick and easy throw it in the oven and let it cook for about 47 minutes or until the recorded episode of Law and Order is over. I will have to put the recipe up for you all.

Tuesday - Chili and corn bread.

Wednesday has been deemed New Recipe night. This week we are going to try Rachel's Texican Hash 
over at A Southern Fairytale  She is sooo stinkin' cute, she cooks up a storm and she looks just like me ( HAHHAHAHAHAA ...I only wish), But I digress. You should really go over and she what she is up to this week.

Thursday - Beans and Rice with Turkey sausage.

Friday is FEND FOR YOURSELF... momma is tired and there is a bunch of leftovers in the fridge night!

What's For Dinner?

It has been such a HECTIC work week, Handsome man and I have not even sat down to prepare one. We are working on the fly this week.

Tonight it seems I saw thinly cut steaks in the fridge defrosting. Hmmmm... looks like someone is going to be doing some marinading as soon as they get home.
My marinade consists of olive oil, salt, seasoning salt, minced garlic, ground pepper cloves, and a pinch or so of red pepper flakes. Now don't ask measurements, because i just eye ball it now that I have been doing it forever.

Now... sides? Smashed potatoes with bacon and Parmesan and brocolli floret.
Of course there will be some sauteed mushroom and onions with it ;-)

Maybe, just maybe I will post a picture of it.
